Cooking isn't about following a recipe. A recipe will tell you to chop to this length, measure this much, and cook for this long. No, cooking is about creativity, about listening to your food and learning from it.
I'll help you cook without a recipe. The most important thing to develop as a chef is your intuition, which will only come with time - so I'll lend ya mine. We'll start with some vague idea of a goal: fried catfish, or Thai curry, or crab dip, or roasted chicken. We'll talk through it, brainstorming and figuring out how to make it, and then we'll go for it!
Training & Qualifications
I've been an experimental chef for five years and I've made many crazy dishes. Chicken and waffles a la mode with root beer syrup, Swedish calskrove (which is a giant ham and cheese calzone with a fully loaded burger and fries inside), a pizza with a 1:1 tomato and bean base, experimental beverages designed to invoke the taste of nutty milk and the smell of browning butter, etc. etc.
Availability & Preferences
Weekends are better, but weeknights will work. This can be done virtually but is better in person.
