After I got out of the Navy, I was finally able to go back to my home island in the Philippines called Mindanao. You see because my island was or is considered "dangerous" I could not visit unless had family there. At the time I had no biological family and so while in Active Duty I was not allowed to see my Island. That all changed when I got out of the Navy in 2013 and by late 2014 I arrived in Mindanao to visit my orphanage, BCHC (Bethany Christian Home for Children). Where I re-discovered a very famous dessert one day while out in the market of Talakag. A woman was selling these on the street... I bought one and ate it. They were so good, I asked her how much for the entire thing. I think at first she didn't understand what I said but boy was she happy once she realized I meant her entire batch for that day!
And so without further ado, I share this recipe to my simbi family. It turns out it takes a little while to cook as it is steamed. I provide you this recipe for only 1 simbi just so you can enjoy it as I did!
