Veganize your favorite recipe!

Tell me what you want to veganize. For example vegan tacos... I can tell you a million things I like in my tacos and how I make them... OR you can tell me your favorite way of eating tacos and I'll tell you how to recreate that. Personally I like to get some refried beans with enchilada sauce and diaya cheese melted in then I like to make home-made guac. I usually put cilantro, lime juice, red onion, garlic, jalapeno peppers (or a blend of spicy peppers), diced tomato, avos, salt, pepper and chili powder. The best thing in the world though is homemade salsa. Especially when you can score some really good tomatoes such as heirloom. For homemade salsa do everything the same as guac except no avocado or chili powder (unless you want to hey!) just lots and lots of tomato and sometimes I like to add garlic powder to that.

I also really like romaine lettuce in my tacos .... And I usually like to get pretty weird after that, It's fun for me to have extra toppings like sweet potato cooked with paprika, chili powder, garlic powder, salt & pepper. sugar or maple syrup, cayenne pepper/ spicy peppers. First I would put like 3 or 4 tbsp of water in a frying pan and when that heats up I'd add the sweet potato diced smallish the water will help cook the potato and soften it up.. adding the spices.. After its cooked a decent amount (maybe adding more water) and after most of the water has been absorbed by the potato then I would add olive oil to crisp it up at the end.

I also enjoy collard greens or other greens like spinach or kale or even a blend of it all! I would cook shallots and garlic in with them.. Also using water to cook them in. Maybe adding a touch of lemon juice at the end.. and always salt and pepper. Maybe some oil at the end too though I prefer to keep my oil intake at more of a minimal amount.

I might also get a bag of frozen Organic* yellow corn and warm that up in a tad of water with some salt and pepper.

I like to get hard taco shells but I also really like burritos and eating all the stuff with chips too. There are too many beautiful options for this meal. I mean I could go on and on with sides you could add to a burrito/taco

Ohh yeah and you can also add things like tofutti sour cream ... which people like my sister love. I personally might prefer to make my own out of cashews though that is gonna be a project.. and I don't think I even like sour cream that much! :)

So that is my example of something I might do but there are so many options... fish tacos, meaty crumbly tacos, jackfruit tacos etc and you know what else? There are other foods than tacos.. I know this may come as a shock to you. This was also very shocking for me as well. I mean how about a vegan margarita cuz did you know there are even animal products in some alcohol? forreal check out www.barnivore.com to see what is and isn't vegan. (not everything is on their site-yet) but most everything is.

Anyways so usually when I want to create a new recipe I will google search vegan whateverthefunk and look at a few different recipes and see what ingredients people use - maybe change it a little with things I prefer but keeping the core idea. So please include any preferences for what you really like or don't especially if we are going to work on several recipes together... The more I know you the better. Like truffle oil? ew weird. - for me.

Also please include any other expectations you may have for the dish including how healthy you'd want it, little to no oil, gf, consistency or textures etc

*I'm really weird about organic.... Especially when it comes to corn, wheat and soy which are the three most commonly genetically modified ingredients. Also I've seen pictures of the guys spraying pesticides in hazmat suits... so that's cool.

Training & Qualifications


I've been vegan for almost 4 years. My momma raised me vegan and I started learning to cook when I was around 8 years old. I started really paying attention to the way things cook in different environments and with different combinations of things. For instance I flippin love the smell, look and taste of garlic and onions cooking in olive oil. And everything about that is going to be different if I want to be healthy and cook it in water instead. (though still delicious) And ever since I embraced a Vegan lifestyle another world of food opened up to me. While yeah I was raised on quinoa and nutritional yeast I had never known about different things like jackfruit and cauliflower wings!

Not only have I been absorbing food knowledge but I also know a heck of a lot about the animal agriculture industry. Cowspiracy which is on netflix showed me how it's hurting our planet worse than all of our transportation industries combined. it's my favorite film on the subject because it's mostly just extremely factual. What the health is also on netflix and this one has got people going vegan over night! haha <3 <3 So anyways I learned about how it affects our health, the planet, most of all the animals and to me the experience of eating suffering. We become what we eat. We can talk more in depth about this as well if you wish.
