Food and vegetable ferments are an abundant and all natural source of probiotics. Also a delicious way to add texture, colour and nutrition to your meals.
I have a decent amount of experience fermenting vegetables and beverages for my personal enjoyment and health benefits. Some of my favourites (and easiest ferments) are: kombucha, ginger bugs, sauerkraut, mixed vegetable ferments, and kimchi.

Note* A small quantity of alcohol is inevitable in fermented beverages, it's the nature of the beast! However, I currently do not have any significant experience in brewing beverages specifically for alcohol such as beer, wine, cider, or mead.
