Pancake mix-and-match recipe

I'm looking for someone with baking expertise to help me create a mix-and-match recipe or guide for making huge batches of pancakes. I try to make a whole lot of healthy pancakes on Sundays for me and my kids to have for on-the-go breakfast throughout the following week, and every week I have to hunt down new recipes and try to modify them to work with what I want to include... It's a pain!
I want to be able to shift ingredients around depending on what we have on hand and what we're (I'm) in the mood for. I'd like to be able to mix and match: peanut butter, nuts, dried fruit, coconut flakes, chocolate chips, oat flour, flax meal, whatever other healthy stuff. We're an egg-eating, milk-drinking household, so relatively typical recipes are fair game.
The ultimate goal is to have high-protein, high-fiber, nutrient dense breakfast that we can eat in the car!
