Baking advise or lessons

I've been baking for over thirty years, I've worked in or run four different types of restaurants. I've recently figured out that I'm sensitive to wheat so I've had to switch up my baking to wheat free alternatives. Im also familiar with egg, dairy, fat and sugar restrictive diets. I also love to make almost all types of candy. I can offer a lot of advise on how to cook most foods. I've given cooking lessons several times and I'm developing my own cookbook.
