I will get your kitchen knives extremely sharp using traditional Japanese water stones. This method doesn't wear down your knife as much as a machine sharpening would, preserving the life of your knife!
A sharp knife is actually a safer knife to use because you have more control and confidence when you use it. It allows for more precision and is more condusive to learning better knife skills. Plus it makes cooking a heck of a lot more fun!
Training & Qualifications
I am a professional line cook, so I hand sharpen my knives regularly. I have several Japanese water stones in various grit ratings and have sharpened the knives of many of my peers, friends, family and coworkers.
Availability & Preferences
Wednesdays and Thursdays are my usual days off. I could probably do late mornings or early afternoons as well for pick up/drop off.
