On the brink of legal age, he began the journey with the Court of Master Sommeliers. Experienced in managing kitchen staff and preparing foods while controlling cost without compromising quality and taste.
Being a Sonoma County native, Nicholas brings a wide knowledge of local produce and wine. Throughout the year Nicholas will utilize various seasonal vegetables sourced from local small farms and farmers markets, along with top quality, humanely raised meats pairing them with the perfect wine to assure an exceptional dining experience.
